Egg curry

I’ve recently discovered a liking for egg curry after my sister in law made this tasty dish for Sunday lunch. It’s really easy to make and very filling especially when you have guests:

You will need:
  • Hard boiled eggs – average 1.5 – 2 eggs per person
  • 2 chopped onion
  • 1 tin of tomato (pureed) and squeeze of Cirio tomato paste
  • 3-4 cloves of garlic
  • 1/2-inch piece of ginger
  • 2-3 green chilies
  • Chopped coriander leaves
  • Salt To Taste
  • 3/4th tsp turmeric powder
  • 1/2 tsp coriander powder
  • 3/4 tsp garam masala
  • 2-3 tbsp vegetable oil

How to make it?

  • Boil eggs in hot water for about 15 minutes, remove the shell and keep on the side
  • Heat oil in a saucepan and fry onions, garlic, ginger and green chillies till golden brown
  • Add salt, turmeric, coriander, garam masala and fry for a minute before adding tomato puree and cirio – fry till it leaves oil
  • Cut the boiled eggs in half and add to the saucepan
  • Add half a cup of water and bring to boil and reduce the flame
  • Simmer for 10 minutes before garnishing with coriander leaves and serve hot with naan
