Mushroom tarte tatin

I know that’s a fancy way of saying mushroom open pie or tart but I like the word tarte tatin and it conjures up images of homely cooked food….I had a roll of puff pastry, herbs, garlic and bought some mushrooms and shallots to make this tarte tatin which was super easy and quick.

Pre-heat the oven to 180 degrees. Melt some butter and oil in a pan, add mushrooms and cook for at least 10-15 minutes until all the liquid is gone. Add garlic and herbs and simmer for a few more minutes. Roll out the pastry and place on an open baking tray. Spoon the mushrooms onto the pastry leaving an inch at the edges and sprinkle cheese. Pop in the oven and once brown take out to eat.
